it's pumpkin bread...
no, it's not a cupcake, true that. but oh so good.
here's the recipe:
pumpkin bread
3 cups sugar
1 cup vegetable or canola oil
4 eggs
1 can of pumpkin
2/3 cup water
2 1/2 cups flour
1/2 tsp. baking powder
1 tsp. salt
2 tsp. baking soda
1 tsp. each, ground cinnamon, cloves, nutmeg (and i always throw in a tsp. of pumpkin pie spice mix too, although you could just add a little more of each spice already listed, or a pinch of ginger).
Mix together sugar, oil and eggs. Add pumpkin and water. Sift together and add dry ingredients and spices. Pour into two regular sized loaf pans, sprayed with Baker's Joy, or lined with parchment paper. Cook at 350 degrees for one hour, less for glass loaf pans. Freezes well.
